I had an entire post typed out on these muffins, and when I went to post it, the entire recipe disappeared. The same thing happened the other day with the Apple Cinnamon ones, and I re-did it all. I am ticked at my computer right now, and honestly don’t have the patience to do it again.
Basically, use the recipe from the Apple Raisin Cinnamon Chip Breakfast Muffins and substitute 1 cup of apricots, 1/2 cup dried blueberries and 1/2 cup of walnuts for the apples, raisins and cinnamon chips. Everything else is the same.
