What’s in my Fridge?

A fellow Sweat Pink Ambassador did a post on what she has in her fridge, and invited all of us to participate with her. I thought the post was for tomorrow, but it was actually for this morning. I'm going to go ahead and blog abut mine anyway, because is sounds like a fun idea! I have a lot of healthy stuff in mine. In fact, it's really all I buy. I find that if I don't buy unhealthy things, I don't tend to eat them. I choose snacks that I have on hand and end up making better choices that way.

The cheese next to the butter is to use to give Ali her medicine. Below that, I have fat free feta, Gorgonzola, and goat cheeses. I love using the feta in salads. Next to that, coconut water, almond better, sunflower butter, basil in a tube, and artichoke antipasto. Down from that are a couple of sandwich spreads, fresh ginger root, then all sorts of condiments, including sugar free butter maple syrup, minced garlic, spicy mustard, salad dressings, honey, and spray butter. Below that is iced tea, mustard, sf jam, ketchup, tahini, and grated Parmesan.

I made a really good and quick pasta using the artichoke antipasto, black olives, sun dried tomatoes, ff feta cheese, and some fresh basil plus some from the tube. I used quinoa pasta and stirred I all up. It can be eaten cold or warmed up. I saw this same concept at Trader Joes when I bought the antipasto. It's really good!!

I am taking it to work for one of my meals tomorrow.

Here is the top shelf of my fridge. You can see I have a caffeine problem immediately. There is iced coffee for days, and No Carb Rockstars. There is also almond milk, beef broth, peas for Ali, water, sparkling water, limes and beets but up in a container, and ingredients to throw together a smoothie in the morning for on my way to work. All I have to do is add almond milk and ice and throw it on the magic bullet!

Next shelf you see black olives, quinoa, baby spinach, lunch and dinner for work tomorrow, blueberries and fresh mint for my non-alcoholic mojitos. Next shelf down are baby arugula and baby kale for my salads, smoked salmon, fresh Parmesan and asiago cheeses in the drawer, and eggs.

In the crisper are carrots, Ranier cherries and beets.

My freezer is pretty anticlimactic. It has stuff from Costco that I loved to eat before i cut out gluten, some frozen chicken breast, Popsicles, Skinny Cow peanut butter chocolate ice cream sandwiches, ice packs, frozen veggies, berries, and cheese, and that's about it.

I decided to include the fresh produce I have out on my counter, because I eat a lot of it, too. Some people might keep some of these items in their fridge, but I don't.

There are bananas, peaches, plums, apples, tomatoes, shallots, lemons and limes in the basket. There are also watermelons, butternut and spaghetti squash in the counter.
