Mud??? OMG

On a whim, I entered a contest on She Runs Strong to win an entry into a mud run/obstacle course 10K that is happening next weekend. My friend Megan posted on FB that she wanted someone to do it with if she won. Well, we both won!! Now….here’s the thing: I am scared of mud. I mean, if I was running for my life or to save my dog’s life, or whatever, bring it on! But to voluntarily submerge myself fully clothed and shoed into mud on a Saturday afternoon?? Never been my idea of fun. I totally didn’t expect to win this! Maybe God is trying to tell me to try it, because I’ll love it! Everyone that I’ve ever talked to has had a lot of fun at these types of runs. I will just be sure to be prepared with a change of clothes and some clean undies, lol! I am excited, though, really, especially for the obstacles! I’ve always watched shows with obstacles and thought “I could SO do that faster!!!” so here’s my chance to find out what I’m made of!

My Blueberry Banana Nut Oatmeal Breakfast bake turned out SO good! So as I promised, here’s the recipe:

1 cup old fashioned oats

1 tbsp ground flax seed

1/4 cup chopped walnuts, divided

1/4 cup slivered almonds

1/2 tea baking powder

3/4 tea cinnamon

pinch salt

1/4 maple syrup (sugar free is what I used)

1 cup milk (I used almond milk)

2 egg whites, lightly beaten

1 tbsp butter, melted and slightly cooled (I used I Can’t Believe It’s Not Butter light)

1 tea vanilla extract

2-3 ripe bananas peeled and sliced

1 cup blueberries (I actually used a whole small package-not sure how much that is)

Preheat oven to 375. Lightly grease a small casserole dish. Mix the dry ingredients in one bowl (up to the salt) and the wet ingredients in the other (up to the vanilla.) Spread the sliced bananas in a single layer over the bottom of the casserole dish. Sprinkle half of the blueberries evenly over the bananas.

Pour the dry ingredients in a layer over the bananas.

Then, pour the wet ingredients over the oats in an even layer. Sprinkle the remaining blueberries , walnuts and the almonds on top, then bake for 35-40 minutes until the top is browned and the oats have set.

I’m taking it with me to work tomorrow for breakfast. I had it this morning, too, and it is delicious!! You can change this up with whatever fruit and nut combination you want!

I ran 2 miles on the treadmill tonight.

I know, right? Not a treadmill fan, but thought it would be less impact on my injury. I was wrong. I had a goal of 3-4 miles, but had to stop at 2. I am SO #$^&#@ sick of being injured!! I am going to need to take up swimming or something so I don’t go insane! I love to swim, don’t get me wrong. I’m a good swimmer, too, but really am not a fan of swimming for exercise! I would rather be in my bikini cooling off from the sun or frolicking in the water, lol! Maybe I will just suck it up and give it a try sometime.

I finally did some juicing today for the rest of the week and the weekend. I have been wanting to, but just haven’t honestly felt like going to the trouble. I made a fruity juice and a green juice. Here’s the green one:

It has kale, spinach, parsley, apple, orange, blood orange, and carrot.

Here’s the fruity one. It has apple, orange, blood orange, carrot, strawberry, blueberry, beet and fresh ginger.

I am also baking zucchini chips right now. I saw them on Pinterest. You thinly slice zucchinis, and place them on a baking sheet. Spray EVOO on them and sprinkle them with salt and pepper, then bake for 2-2.5 hours at 225 degrees until they are crispy. I’ll let you know how they turn out!

This is another Pinterest find. I will do a post on the recipe for this one. It turned out excellent! I can’t wait for breakfast tomorrow!

For dinner tonight, I had a Portobello Chicken Artichoke pasta. I used quinoa spaghetti for it. It turned out great!! I’ll post this recipe, as well.

Ragnar Del Sol 2013 Recap-Part 2

Best sleep ever! In a sleeping bag, on a tile floor. That is the level of exhaustion that we were all experiencing! It didn’t matter, though, because the experience was so amazing!

I was in total shock of this run! There were a couple of faster girls that started just ahead of me that motivated me to pick up the pace. I knew I couldn’t keep up with them with my lack of training, but also knew that I could maintain the speed I was going as long as I didn’t experience any pain. I didn’t! So I averaged an 8:47 pace for my 2.5 mile leg in the middle of the night! What a feeling of accomplishment Smile

Yeah yeah yeah, I know, an ultra Ragnar team sounds insane….but I am insane! So watch out kids, next year we might be doing it ultra-style! That is, as soon as I am no longer sore from this year’s race with 12 people, lol.

Speaking of Chris, she and her hubby are absolute angels! They had us over to their house to take showers and sleep on cots in the middle of their living room between Rounds 2 and 3.  That shower ranks up there with one of the top 3 showers of my life. That cot couldn’t have been more comfortable! Thanks again SO much for having us. Chris and Gene!!!

When we saw Jenn crossing the bridge, we all got up and joined her to cross the finish line as a team! Such a cool experience! We got our medals, and then got together for a team picture.

All this talk about cupcakes, and I never once had a cupcake during the race. I decided there would be cupcakes for dessert that night! There was just one problem…. you see, the red velvet cupcakes only came in packages of 6. I didn’t need 6 cupcakes laying around my apartment because I would eat all of them. So I gave 4 of them away to 4 lucky Girl Scouts selling cookies in front of Safeway, and made their night! Then I went home, devoured the whole pizza and both cupcakes. Self control happens at the grocery, kids. Don’t buy it, and you won’t eat it! They were DAMN good, though! I can’t tell you how much I slept for the next two days, because you might lose every ounce of respect for me that you thought you had. I did allow myself some time to relax and recover, though, and it was nice Smile.

As for Ragnar, you’ve gotta do it! Like I said, it’s now on my “to do every year list.” Now, I want to do Hood to Coast. Anyone on a team that needs members?? I would love to be on a reserve list! I am already on at least one reserve list, but I’ll take more if offered!

Cr-AZ-y Weather

I woke up this morning, and it was raining and cold outside. I also had a headache, so my morning plans were scrapped. I went to Sole Sports to pick up out shirts for Ragnar and brought them to Jen who is doing the printing for us. I can’t wait to show you guys the shirts! They are going to be SO awesome!

I planned on going to CrossFit again tonight, but my hamstring is really tender from running on it the other night. I seriously only ran a half-mile. I am pretty nervous for how this weekend is going to go. I just decided to give my body another rest day since that’s what it was telling me it needed.

Instead of CrossFit, I got FroYo and shopped at a cute little clothing boutique I discovered here in Ahwatukee.

I got two really cute new dresses that I look forward to showing you soon. The lady next door at the alterations place is altering one of them because it was too long. She is awesome! If you ever need a quick alteration, she’s your lady! Thank God I wasn’t up north, because this is what it apparently looked like today on the 101 in Scottsdale!! I can only imagine what kind of insane road stupidity this caused considering what sprinkles of rain do to people out here! SMH…..

After I finished there, I came home, ate dinner, and packed for Ragnar. I will try and blog a little bit about the packing and necessities tomorrow. I am exhausted and want to get to bed early so I can have a productive day tomorrow. Hopefully no headaches for this one again!!

Off On A Government Holiday? Seriously?

Yes kids, I am off today. Is it because I have the kind of awesome job that lets their people off on President’s Day? No….it’s because I have the kind of awesome job that gives me vacation days and lets me take them Smile. I had plans for this weekend, but they didn’t end up happening….so here I am with a four day weekend. I just did yoga three days in a row, and I intend to make it four! I really want to go hiking, too. It has been SO long since I’ve hit the trails. I think part of what scares me is that I always end up trail running parts of every hike, and I am not running right now. It would be really tempting to lightly jog on the flat part of Telegraph Pass, but it may aggravate my hammy before Ragnar-which by the way is in 5 days!!!

Team Dessert had one final meeting yesterday to discuss our plan of attack, and I’m starting to get really pumped up about it! I went out to Sole Sports and Walmart to get some stuff to prepare:

Ali says she wants to go, too, so she can be our mascot and lay on my cool new sleeping bag. She tends to steal warm things from me, such as blankets. Every soft, warm new blanket I get, she steals. The nerve….

Here are my vest and headlamp (it’s pink!!). There are very strict safety regulations for this race since it goes on 24/7 and half of the legs of the race are run in the dark. You also need a flashing L.E.D. light, which I already own. It appears that my second leg is going to be around 3 or 4 in the morning, so these items will be a necessity.

One of my favorite stories about Ragnar comes from a blogger whose blog I read regularly. She ran Ragnar from Miami to Key West last year, and had the surprise of her life at the finish line! It’s Meghann from Meals and Miles!

Kick Monday in the Face, Check.

Last Monday was the worst and most emotional day I have had in a long long time. Today, I decided Monday was going down. It did.

I am so glad to have another weekend of work under my belt. I have the next three weekends off, and couldn’t be more excited!

Ragnar is in two weeks, and I am still trying to take it easy on my hamstring so I can run it. My bike trainer isn’t my new best friend, but it’s becoming an acquaintance. I rode for 37 minutes tonight, and watching the Bachelor made it exponentially easier for me!!

I am just glad to have a way to try to stay in shape. I never realized how much I loved running (more than anything else) until I couldn’t. Nothing else seems to be as enjoyable and give me the same sense of accomplishment that running does. I will never take it for granted again!

I finally got an immersion mixer! I have been wanting one for awhile to use to make soups and other things. I decided to spend a little bit extra and get a really good one.

My friend and I decided to do our nails pink in honor of this week. It is Valentine’s Day, you know? At least I can paint my nails and wear my valentine socks in honor of the occasion. The pink color from OPI is called Pink Friday, and is from Nikki Minaj’s OPI collection. I got the Essie pink glitter polish in my BirchBox a few months ago. I filed down the surface of my nails and applied three coats of pink, plus a topcoat. So far, they are still looking good!

This is the new candle from Target that I am in love with that I showed a picture of the other day. It smells absolutely incredible! I bought a few candles off of a website about 4-5 years ago that I paid like $25-30 a piece for (yeah, I know-crazy!) and this is the first candle I’ve found that reminds me of one of those. It was only $9.99!! If you can find it, get it. You can thank me later Winking smile.

Tonight, I had SUCH a good dinner after my trainer ride.

I got a rotisserie chicken from Safeway yesterday to pull apart for the pizzas I made. Tonight, I had the rest of the chicken from that (skin and fat removed), and sweet potato fries baked with a tiny bit of EVOO, salt and pepper.

I also made a salad with spring mixed greens, sun-dried tomatoes, artichoke, black olives, fat free feta cheese and a tomato and Vidalia onion dressing I got at the store yesterday. It was one of the best salads I have ever made!

You see, I am not a huge fan of salads in general. Give me a basic salad with lettuce, tomato, carrots, cucumbers, etc., and I am not a happy girl. Give me a salad like this packed with healthy stuff and and a flavorful healthy dressing, I will have one with, or for every meal! Thanks again to my friend Kat for introducing me to how good a healthy salad can be! I have never used artichokes in a salad, but they are quickly becoming my favorite not only for those, but for a lot of things! They are packed in olive oil, but I use a paper towel to absorb the excess before cutting them up. They are great on pizza as well, as you see here:

I determined that the herb pizza dough from TJ’s is way better than the whole wheat one. It just makes the pizza that much better!

Super yummy as usual, I also made BBQ Chicken pizza last night for the week. The cheese I used to top it with is 2% mozzarella. It only has 4g of fat per serving.

I am LOVING Revenge right now!! It just keeps getting better! I am finishing it up right now. I am also loving the Bachelor! Tierra is just ridiculous. She seriously called Ashlee a cougar tonight. Ashlee is 32 years old, and light-years more mature than she is. I would much rather be single with no kids at 32 than unhappily married with kids at 24. Or 30 for that matter! I know my Mom watches the Bachelor and she also reads this, so I will not say anything about the elimination and events that transpired tonight. I will say that I was not disappointed or surprised. Having the next two Monday’s off means GIRL’S NIGHT at MY PLACE for The Bachelor! Who’s in???

Anyway, I am off to bed because I am going to yoga and physical therapy tomorrow morning. I hope you guys had a great Monday as well!

I love Running

I did 22 minutes of intervals on my new bike trainer after I got home from work today.

This is about how I feel about that. I will treasure running THIS MUCH more after I can run again. I just get so bored on the trainer. I don’t mind riding outside where there are beautiful things to see and places to go. I don’t even like running on the treadmill that much, but I think I would like even that better than this. I will never take a healthy body for granted again!

Now I am going to shower and relax tonight with my new candle burning. Have you guys ever smelled this candle from Target?

It is absolute heaven! Just one whiff of it and it relaxes me. See that thumbnail? These nails are one day old:

See the chipping? Now you see why I always have the intention to paint my nails but never end up doing it. This is what always happens after one day. I put on two coats with an Essie topcoat. I am open for suggestions if anyone has a trick to get nail polish to stay on stubborn nails. I think I am just cursed with oily and slick nail beds….

Ok, so this post seems whiny. I am sorry about that. I am just going through life stuff and have no good outlet (running!!) and had to work all weekend. Eating chocolate might help for 5 minutes, but then I’d feel like a fatass and wish I could run even more. I’ll just stick to my salad and maybe some FroYo after I’m done with it. FroYo has nutritional benefits, did you know? I’ll take a picture of the poster at Yoasis for you and post it next time so you can feel better about yourself when you eat it like I do Winking smile. I make the best run-on sentences.

Get Fab February and Try To Be Happy Friday

So today, I got up, ran and caught up with my girl Karen, went to a meeting, then physical therapy, then another meeting. Karen’s life is like a mirror image of mine right now, and she is an amazing friend. She helped make my Friday morning a little bit better. At physical therapy, I talked to Lori, my PT, and we decided that is would be a smart decision to take a couple of weeks completely off of running. It sucks. Coach Susan agrees it’s the right thing to do. It still sucks. Sometimes doing the right thing sucks…

On my way to PT, I got a Rockin Refuel Less Sugar formula to put in my coffee. It was SO good!

After my noon meeting, I went to Sole Sports to see Karen and talk about shirts for Ragnar. We are going to be SO cute with our team shirts! Karen rocks for helping us out! I got a really cute purple striped Nike tank for the summer and some KT tape. Joe helped to explain to me how I can effectively KT tape my ass back together.

So after I got home, that’s what I did! Notice the purple….hopefully the purple tape works even better because it’s so awesome. I wouldn’t want any other less awesome color taping my ass.

Is anyone doing the Skirt Chaser? I am planning on running it for fun if I can by then. Last year I was freshly back into running and thought I could PR. So I went straight out the gate at a 9 minute mile and then crashed and burned as soon as I hit the hill on Curry. 33 minutes later, I crossed the finish line dying! So yeah….not planning on doing that again this year. It’s a fun race if you’ve never done it. Hopefully it won’t be as hot this year as it was last year. Yes, almost too hot to run comfortably in Feb. Welcome to the Valley of the Sun. Check out that promo code!

Speaking of February, I am going to participate in a couple of really cool challenges this month. The first one is by Running Toward Healthy, and it’s called Fab Ab February. Here is her calendar:

Also, Squat Til You Drop is a challenge to make that booty work and get it tight and round (that is if you have booty to make round….I’m still working on that lol!)

I am going to do what I can, though, and will probably benefit as much from the exercises for my strength and healing as I will for my soon to be tighter booty! Woo hoo for the hot booties!! I had PT and a 20-25 minute run this morning, so I am laying off on the booty for today. I did, however, do the ab work.

Tonight, I had dinner with Karen and Meeker at Pita Jungle, and we ran into Loken and Bill there, too! How cute is this pic!

I was so hungry that I forgot to take pics of my food. We split a chicken salad and a chipotle chicken something pizza, and each got coconut curry soup. It was amazing as always. I also had their berry tea, which is my fav one to get in the evening because it is decaf. It is so good and refreshing!

Then, I took a bath and shaved my legs again. Now I shall sleep well, hopefully, because of it.

Plans for the weekend? Nothing out of the ordinary for me. I think I am going to try riding my bike tomorrow morning for the first time in a long time. I am not allowed to run, so I can only cross train. I am going to go batshit crazy if I don’t find something to keep me in shape. Hopefully riding my bike won’t hurt. Will report back.

Had A Great Weekend!

Not going to write much tonight, except I had a fun weekend! My cousin Chad came to visit from Indiana, and we took him out Saturday night.

We went to brunch at Switch this morning, and I had Sun dried tomato and pesto risotto and fresh fruit.

I liked the place, except our waiter checked with the kitchen to see if they had cantaloupe or honeydew, and they said honeydew. So I ordered it. Do you see honeydew? Nope. Maybe he just doesn’t know the difference. Other than that, it was nice!

So I have been running minimally lately, and slacking off in the healthy eating department. (Only for the last couple of days on the eating.) It’s driving me crazy! I am hoping that this week, I can get it together and start running a little bit more. My hamstring is a long way from healed, but is slowly but surely improving. Coach Susan and I are officially on the same page with my injury and my training and goals for the next several months, so things should start taking off very soon Smile.

Once Wednesday is over, I will be much happier. (Inventory at work is Wednesday.) This coming weekend is the PF Chang’s Rock ‘n’ Roll Arizona Marathon and Half Marathon. Devin and I are running it together. He has such patience to run with a gimp like me! I want to wish Ari and Nicole luck with their FIRST FULL MARATHON!!! You guys are going to rock it!

Happy Saturday!

Today was such an awesome day that I’m going to tell you all about it!

I started off my day with two meetings, then my first hot yoga class ever! I got a Groupon for an unlimited month at Hot Yoga Ahwatukee for $39. It normally costs like $140. It was good, just really hot and sweaty-which is to be expected, but something I am definitely going to have to get used to.

That is the studio where classes take place. It’s really nice!

I got an awesome new yoga mat from Lulu that was well worth the cost.

Then, after I got home, I went for a short run (or trot as I’ve been calling it) through the neighborhood. I did 2.5 miles in about 28 minutes, and only had a tiny bit of whining from my hamstring.

After my run, I took the ornaments off my tree.Exciting, I know. Putting up the tree is SO much more fun than taking it down!

After that, I stretched, used my foam roller, and then took a nice warm bath with my new Lush stuff I got yesterday. Lush is amazing if you haven’t been there!

After my bath, I did a little bit of cooking. First, I juiced apples, oranges, carrots and beets that I had in my refrigerator. I also juiced a small chunk of ginger with it to give it a little “zing.”

Then, I decided to make Ari’s Cranberry Apple Chicken Salad to have for lunch this week. It is SO good!

I had a wrap with some of this in it for lunch (late lunch), along with some seaweed salad and fresh juice. SO good, and good FOR you!

Then, I made Mushroom and Rosemary Risotto for Devin and I for dinner. I will be blogging about this recipe very soon. Here’s a sneak peak at what it looked like:

It turned out to be ridiculously amazing! Devin loved it! I love it, as well! I am definitely going to make it again. I want to make it for my parents when they come out to visit AZ in the spring. Yummo!!

Then, we hung out an watched a movie, and that’s that!
