I have been thinking about this dinner for two days now! It turned out really good! It took a lot for me to only take three more bites of the leftovers and put them away. I love Mac’n’Cheese. I’ve loved it since I was little. Kraft mac’n’cheese, Velveeta Shells and Cheese, my Mom’s homemade version she brought to family get togethers-I could eat it everyday (if it was a little bit healther, that is!)
Tonight’s dinner was adapted from a recipe I found on Health.com that was written by Tina from Carrots’n’Cake. It is a much healthier version than most are used to. I used a few different cheeses, and also added some spinach and Portobello mushrooms for added flavor and nutrients. Tina finished her version off by putting it in a baking dish, sprinkling on breadcrumbs and baking for 20-25 minutes. I skipped this step because I was starving, but feel free to add it in if you please :-).

OMG it WAS so good!! So so easy to make, too! I’m making it for Devin and I tonight. The quinoa pasta is amazing, and I feel so much better about eating it! You can totally experiment around with the cheeses, too. Let me know if you make it!! Have an awesome weekend!
