The Most Important Meal of the Day
I decided to start Monday of right by making some “Four Ingredient Pancakes” this morning. I did modify the recipe, though, so there are actually 8 ingredients now. They are still really easy to make, though, and really healthy.
The original recipe came from here. They are called Greek Yogurt Pancakes. The reason for using some almond meal was just because I had it, had never used it before, and knew that there were good nutrients in it. I also added cinnamon, nutmeg and cardamom to give them a little bit more flavor. So the ingredient changes don’t make the recipe that much more complicated.
Simple Cinnamon Spice Greek Yogurt Pancakes
6 ounces plain, vanilla or honey Greek yogurt
2 egg whites
1/4 cup almond meal
scant 1/4 whole wheat flour
1 tsp baking soda
cinnamon, nutmeg and cardamom to taste
You can use a scant 1/2 cup of whole wheat flour if you don’t have almond meal. Stir together the yogurt and egg until mostly smooth with only a few lumps in one bowl, and the flour, almond meal and baking soda in another.
Pour the wet ingredients into the bowl with the dry ingredients and stir until combined. The batter will be thick, that’s normal.
Spoon batter onto a griddle or into a pan on medium-high heat. Flip when you start to see a few bubbles on the surface. I got three medium/large pancakes out of my batch. You can make them as big or small as you want.
I put some spray butter and sugar free maple syrup on mine. You could also put fruit, almond butter, Nutella, or anything you want on them! Their texture reminds me a bit of French Toast. What did you think? Enjoy!!
