Honey Banana Pumpkin Raisin Bread
Finally! I know! I’ve been wanting to blog about this bread since I made it. It is SO good!! I found the link to this recipe on one of the blogs I follow, and adapted it from there to make it healthier. It is so good that I have made two loaves of it this week. I had to share it with some friends, too!
The blog I got it from is called “Oh She Glows”
Here is what you will need:
2 ripe bananas
2 egg whites + 1 egg
1/4 cup applesauce (or coconut oil-or do half and half like I did the first time)
1 1/3 cups canned pumpkin
1/2 cup honey
1/4 cup Splenda Brown Sugar Blend (takes place of 1/2 cup white sugar)
1.5 cups whole wheat flour
1 cup oats
1 tea baking powder
1 tea baking soda
1/2 tea salt
2 1/4 tea cinnamon
1/4 tea each ground ginger, nutmeg
1/8 tea allspice
3/4 cup raisins
Pre-heat oven to 350 and grease a 9 X 5 bread pan
Mash up the bananas, and add ingredients up to the sugar, stirring well
Combine the rest of the ingredients in another bowl, mix together
Add dry ingredient to the wet ones and stir until just combined (I used the paddle attachment on my mixer to do this) then add raisins
Pour into bread pan
Bake for about 55 minutes
Wa la!
I wish I could deliver you a piece so you could try it yourself! It’s a really easy recipe, though, so I highly recommend you try it. Even for those of you with kids out there, I think they’ll like it, too! You don’t have to tell them it’s healthy
Leave a comment below and let me know if you made a loaf of your own
As I type this, Ali is hawking me while I eat an apple, and wants me to share:
I hope all of you have a great week!!
Happy Trails!
