What's For Dinner Wednesday: Gluten Free Crockpot Chicken Phillies on Roasted Portobello Mushrooms

I always think of my wonderful friend Ari when I question whether or not my recipe titles are too long ;-). She always makes me feel better!

This all started when I saw a recipe on Pinterest for crockpot Chicken Phillies. They used rolls to make sandwiches. I wanted to make the chicken, but had to figure out a way to make it gluten free.

The first thing that popped in my head was "put it on a portobello mushroom and top it with the really thin provolone cheese!!" I'm not sure if regular chicken phillies have mushrooms in them, but onions, green peppers and mushrooms are a great combination. So that was it! Check out these beauties:

They are as good as they look, but better! I wasn't expecting them to be as kick ass as they turned out to be! I already want to make them again, and I just had them Sunday. They're so so so easy to make, too! Let me show you how :-)

Ingredients:

1 tbsp light butter

2-3 boneless skinless chicken breasts

One yellow onion sliced

One large or two small green bell peppers sliced

1/2 cup vegetable broth (gluten free if you prefer)

1 tea garlic powder

1/2 tea onion powder

1/2 tea paprika

1/4 tea Stevia or sugar

Salt and pepper (your preference of amount)

4 portobello mushrooms

4 sliced of reduced fat or super-thin provolone cheese

 

First step is to throw the butter, onions and peppers into the crockpot.

 

I used a really small crockpot, so I put the peppers and onions in for an hour on high to cook them down, then added the chicken, broth, and rest of the spices. I combined everything evenly, and cooked the mixture on high for probably 4 hours. Here's what it looks like when finished:

I used my tongs to shred the chicken a few times while it was cooking.

Then, remove the stem from 4 portobello mushrooms, rinse, and place on a cookie sheet or cake pan if they'll fit.

Spray lightly with EVOO, salt and pepper, and roast for 15 minutes on each side at 350*.

Once roasted, place a large amount of the chicken mixture on each mushroom and top with a piece of provolone cheese. Then broil for about 2 minutes, and they're done!

Yeah....I know....I wish I could teleport one to you through the screen. They were that good!

You'll see that one of the ingredients she uses is Dale's Steak Seasoning. I didn't have it, and didn't feel like going out and trying to find it, so I used some of the seasonings it contains instead. If you can find it, feel free to use it and let me know how it tasted! If you don't like the sweet undertone from the Stevia/sugar, try leaving it out and maybe using liquid smoke or a Worcestershire sauce instead. Just thinking out loud....lol!
