Some Things Are Just Designed to Be Unhealthy
I got a Bountiful Basket on Saturday that my friend Amy was SO nice to pick up for me. Look at all of this produce!! Some I already had, but most came from the basket:
So far this week, I've had a lot of apples and pears, sweet potato fries, and sautéed butternut squash and onions. I still want to try to recreate the zuccini fritters and the butternut squash tart from the cooking class Ali and I took at Sur La Table. I tried making a healthier and gluten free version of the dough for the tart tonight, and it blew up in my face! The dough was too wet, and even with flour, it stuck to the counter and I couldn't roll it out. I even chilled it in the fridge for a couple of hours before. I got mad and threw it away.
Plus, I burnt the onions. Ugh! Not a good night for cooking. I'm going to try it again tomorrow with regular flour and a different substitution for 8 tbsp of butter. We'll see if that makes a difference. I think some things are just made to be unhealthy. These things I have to consume in moderation. I am so glad my neighbors love my cooking! :-)
Ali and I also got our pumpkin in the Bountiful Basket. The description was a pumpkin about the size of a basketball. As you can see, it ended up being much bigger! I decided that instead of carving it I would paint it. I had such inspiration sitting right beside me!

I don't really have an injury update for you guys, except to say that my frustration is now turning to just plain pissed off. Every time I feel slightly better, as soon as I do normal everyday things such as standing in my kitchen or walking around my apartment more than usual, I regress right back to where I was a few weeks before. It's just not right. I don't know what else to do besides have another serious talk with my doctor. A stern and serious talk, because I can't continue to go down this same path of up and down, up and down, but never actually better. I have an appointment Friday. Wish me luck. I'm going to need it.
Other than that, there's not much new going on in my life. I'm enjoying the cool weather from my living room. I love being able to leave doors and windows open in the fall. The only thing I really wish I could do now that it's fall is run or bike outside, but that sure as s*#t is not happening. Can you guys sense my bitterness? Fingers crossed for Friday. I have stayed so positive for so long! I am running out of positive!!
