Soupy Sunday! (gluten free!)

Fall is the perfect time for chili, but it's also a great season to try some new soups! I got a little booklet by Swanson broths with 76 homemade soup recipes, and decided to try a couple of them last week. The first one I tried was the Roasted Cauliflower soup with Curry and Ginger. Not only was it healthy, but it was also gluten free!

Here's what you'll need:

1 head of cauliflower cut into florets

2 large parsnips thickly sliced (I peeled and sliced them)

EVOO

1 large sweet onion sliced

6 cups of gluten free chicken broth of your choice

1/3 of a bunch of fresh cilantro

1 tbsp minced fresh ginger

1/2 tea curry powder (I used yellow)

1/2 tea ground cumin

1/2 cup plain Greek yogurt

Preheat oven to 425F. Place cauliflower and parsnips on a cookie sheet, lightly spray or drizzle with EVOO, and season with salt and pepper.

Bake for 30 minutes or until veggies are tender.

Heat another tablespoon, or less if you prefer, of EVOO in a large sauce pot, add the onion, and cook until tender.

Add broth, cilantro, ginger, curry powder, cumin, roasted veggies, and heat to a boil. Reduce heat to low, and cover while cooking for 15 more minutes.

Stir in yogurt. Here, you can do one of two things: 1. Place 1/2 of mixture into a blender or food processor, and blend until smooth. Do the same with the other 1/2, return the blended mixtures to the pot, and cook over medium heat until hot. 2. Get out your immersion blender and blend the mixture in the pot until smooth. I prefer the immersion blender. It made it really quick and easy. Season with salt and pepper to taste. That's it!

You can top the soup with some freshly chopped cilantro, parsley, a dollop of Greek yogurt or sour cream, or maybe some crisp crumbled bacon!

I topped mine with a dollop of Greek yogurt and some cilantro. It turned out great!
