WFDW: Pulled Pork BBQ Chili

This one’s for you, LaRissa! I told you I would post this recipe like 6 months ago. I forgot how much of everything I put in, so I had to make it again, haha!! This chili is on the sweet + savory side, so if that’s your thing, you’ll love it!

It’s a super easy crock pot recipe that I decided to do one time when I cooked a pork loin, and didn’t know what to do with it. It turned out to be SO good! It’s the kind of recipe that gets better the longer it sits. It’s even better the day after you make it, because the pork falls apart the more it is in the chili. I also like to put a super thin piece of cheese on top and melt it. Now I’m hungry!!

Here is what you’ll need:

One pork tenderloin cooked on low for several hours in crockpot, and shredded with a fork

1 can diced or petite diced tomatoes

1-2 cans tomato sauce (standard can size, not the small ones) depending on how you like your chili

1 can black beans

1 can kidney beans

1 cup BBQ sauce of your choice

How easy is this recipe?? Put it all in the crockpot on low for a few hours, stirring periodically, and that’s it! I didn’t use any chili seasoning this time, and honestly don’t remember if i did the first time. You can add chili powder or cumin if you prefer. Let me know if you do, and how you like it! It tastes like a Sunday afternoon backyard barbecue in a bowl :-).

Enjoy y’all!!

Happy Trails,

Stacey
