My Favorite Simple Homemade Healthy Protein Pancakes
I started making homemade protein pancakes when I was back in Missouri. I wanted something different than a shake or protein bar for breakfast, but still wanted it to be on the healthier side. I started with a couple of basic recipes, adapted them to include protein powder, and tweaked my new recipe until it was exactly what I wanted. It makes three servings which reheat well later in the week. This recipe has been a staple in my house for over a year. I hope you love it!
Ingredients:
1/2 cup AP flour + 3 TBSP
8 TBSP (1/2 cup) protein powder
2 TBSP ground flax
1 TBSP baking powder
Cinnamon, pumpkin pie spice, etc
1.5 cups almond milk
1 egg + 1 egg white
1 tea ACV
1 tea Vanilla
Directions:
Mix the dry ingredients in one bowl, and blend the wet ingredients in a separate bowl. Add the wet ingredients to the dry ingredients and mix until smooth.
Heat a large pan on medium to high then grease with a small amount of coconut oil (or oil of your choice). Use ~1/2 cup of batter for each pancake and cook 3 at a time (if they’ll fit). One batch should make about 6 pancakes.
Optional topping:
Ingredients:
One peach diced into 1/4” pieces
Juice of 1/2-1 lemon
Honey to taste
Cinnamon or pumpkin pie spice to taste
Directions:
Add all ingredients to a small to medium sized pan, mix well, and cook on medium heat until the fruit has softened and juice has thickened to s syrup consistency. You can also do this with apples.
Top pancakes with fruit and syrup of your choice. I love Mrs. Butterworth’s sugar free syrup.
