Gluten-Free Surf and Turf
There’s not a whole lot to update you on regarding my injury. It’s not getting any worse, but it’s still not getting a much better. I have been trying to stay off of it as much as possible, so I’m not sure how long I can stand at this point. I know that even walking still hurts some, so call it what you want to call it. I really hope I improve more over the next couple of weeks so I can go back to work. This is getting old, lonely, and frustrating. Dr. A is sending me for an MRI Monday to rule out anything excessive that might be going on. I have not had any diagnostic imaging done on it yet, so I am very curious to find out the results of the MRI!!!
I had the MOST kick ass dinner the other night. I sautéed Portobello mushrooms, onions and fresh rosemary in EVOO and some beef broth, and cooked a filet medium rare. I also sautéed some sea scallops. I added cauliflower mashed potatoes to it, and it was an awesome gluten-free surf and turf!
I’m not sure what I think of these yet because I haven’t tasted them, but I foresee them being good!
Yes, they are real. I have confirmed their existence with a very reputable source . They should be out in Target stores by 7/5. Who wants to go in with me on a package!!?? I DO NOT need a whole one, because I will eat them. All of them. I bet they’d be awesome dipped in coconut milk!!

I am getting ready to go swim, which is still the only thing I can do for exercise. Bleh! Thank you to my friend Sue for getting my ass to the pool even when I don’t want to go.
