Week in review-Part 1
This has been a great week! I have discovered an epic new salad, tried three more new restaurants, planned a girls road trip for next week, had some intense and consistent physical therapy including two dry needling sessions, and I found the last batch of honeycrisp apples in the valley!!
No seriously, I think they are the last batch out there. I haven’t seen them anywhere else, and the tag had “last call” written on it. This made me very happy. Almost as happy as I was when I tried my first homemade Stetson chopped salad!
It is missing one ingredient-the pearl couscous. I am still eating mostly gluten free. so I left it out. Eventually when I get around to making some more quinoa, I am going to try adding that instead. So just pretend there’s a row of pearl couscous between the salmon and the arugula .
I ended up making my healthier version of their dressing, as well! I’ll go into more detail when I do the recipe post, but it is creamy and has basil, shallot and lemon juice included in the ingredient list. Just put a couple of tablespoonsful on the salad, then mix together to look like this:
Then devour.

Needless to say, it’s been a week of great meals at home, too!
I’ve been doing my PT exercises everyday, even when I don’t go in. Nicole wants me to pick 3 do to each day. I try to do at least 3 if not more on most days.
I discovered a really good tea that I found at AJ’s:
The tea bags are larger and specifically made for brewing large batches of iced tea as opposed to individual cups of tea. The watermelon mint flavor is really refreshing, and perfect for cooling off in this heat! I liked it so much that I got another canister of it yesterday, and another flavor that is caffeine free for later in the day!
Since I was at AJ’s, I decided to have a salad for lunch:
I think I’m going through a salad phase. I hope it lasts, because not only are they good, but most of them are really healthy, too! I never used to like salads when I was younger. I think it was because all I ever really saw were basic, boring ones with iceberg lettuce, tomatoes, carrots and cucumbers. I still don’t like those! The more I try new things, the more I enjoy food, and I love it!
Can anyone guess the look I was going for?

Whitney Port was the closest example I could find of what I wanted. I didn’t want to get rid of too much of the blonde. I saw Khloe Kardashian on The Talk last week, and her hair was ombre and I really liked it. Here’s what hers looks like:
She is my favorite Kardashian by far. She’s someone that tells it like it is, and doesn’t always have a great filter. She kind of reminds me of myself….love ya KK!!
Here’s how it turned out:
That’s the best I can do getting a picture of the back as a selfie. Kinda looks like cousin It. The ombre turned out pretty subtle, but almost not enough contrast for me. I wanted to play it on the safe side, in case there ended up being too much dark, but I would’ve happier if the brown went a little further down. Honestly, this picture makes it it look way lighter than it really looks. You can really see the brown a lot more now. I’m not sure why, but it’s great to me!
I’ve been working on this post since Friday night, and I keep falling asleep trying to finish it! I’m going to go ahead and make it a two-parter and finish the second half tonight or tomorrow.
