Simple Avocado Hummus

I showed a picture of this on a Rice Thin in a recent blog post, and promised you guys the recipe. I credit the original recipe to a blog I found on Pinterest

This hummus lasted about 3 days in my fridge. By "lasted", I mean I devoured it all in 3 days. It has less calories than regular hummus, and more nutritional value (avocado=good fat). Next time I make it, I'm going to add some heat by adding a jalapeño with the seeds to the mix. Dip raw veggies or crackers in it, or put it on a sandwich! It can be used in so many ways!

Here's what you're going to need:

1 avocado

1 can white beans, rinsed

1 TBSP + 1/2 tea vegetable or chicken broth

1/2 tea EVOO

Juice from 1/2 of a lime

1/2 tea salt

1/4-1/2 tea cayenne pepper

Blend all ingredients together in a food processor until smooth. Simple as that!!

So yummy! Enjoy!!
