Pumpkin Spice Overnight Oats

I just had the best overnight oats I've made in a long time! They're super easy to make, but just require one more ingredient.

Do you guys remember my Pumpkin Spice butter recipe from last fall? If not, here is the link to it:

Homemade Healthy Pumpkin Spice Butter

I just made my first batch of this for the fall the other night. It is so simple, and yet SO delicious! It goes well on pancakes or waffles, as a dip for fruit or sweet chips like cinnamon flavored Stacy's pita chips, on toast, or as I just discovered, in overnight oats!

All I did was stir oats into vanilla Greek yogurt, and leave them in the fridge overnight. In the morning, I added chia seeds, sliced banana, and a couple of spoonfuls of Pumpkin Spice Butter. Delish!!

I was given some exciting news by my friend Lisa this week. Honeycrisp apples are here!! They are my absolute favorite apples, and I buy them like $15-$20 at a time! Ali is already trying to steal them from me!

Have you guys checked out a Vine yet? It's an app that allows you to shoot about 7 seconds of video in one take, or several splices of takes. I look through videos every day or two, and get so many laughs! People are just so silly and have such a great sense of humor. I have my own Vine account, and am having a lot of fun making videos-mostly of Ali of course :-).

I am trying a pork recipe from Pinterest for dinner tonight. If it turns out to be good, I'll do a post on it!

Happy Trails!

Stacey
