Easiest and Yummiest Fall-Inspired Pork Loin Ever!
I can once again thank my Pinterest addiction for leading me to this super easy and awesome crockpot pork loin recipe. It's a fall-inspired, home sweet home, cinnamony and sweet version of comfort food. Plus, the pork comes out so tender, the only thing that would make it better is having your own smoker to cook it in!
I didn't plate it pretty this time, I hope y'all will forgive me :-). It was so good, and I was so hungry that I figured we could let it slide this time.
Here is what you'll need:
3 lbs pork loin
1 sliced apple
3 tbsp honey or agave nectar
2 tbsp cinnamon
1 sliced onion
Salt
Make slices across the width of the pork tenderloin that are 2 inches apart and about 3/4 of the way through. Put a slice of apple into each one, and place tenderloin(s) into crockpot. Drizzle honey over pork, then sprinkle the cinnamon on top of that. Cover with sliced onion and then salt.
Leave on low for about 4 hours, and enjoy the smell that will take over your house. It will smell like fall. Even better, leave the house and when you get back, you'll be overwhelmed with apple cinnamon goodness!
Last night, I had it again as leftovers, and it was still great. I warmed up some veggie polenta to go with it that came from Trader Joes. It looks a little weird, but I promise it was delicious! The girl that wrote the original blog post for this served it with mashed potatoes.
Prep time for this was less than 10 minutes. It is perfect for a last minute easy meal that you can just throw in the slow cooker and have ready at the end of your day. Let me know if you end up trying this!
