Muffin Monday: Pumpkin Spice Surprise Cupcakes
I know it says "Muffin Monday," but I had to share these amazing cupcakes with you guys! Muffin, cupcake, they're so close, right? At least they're shaped the same! Haha!
I have shared my recipe for Pumpkin Spice cupcakes in years' past, but this time, there's a surprise inside! I was at Walgreens on Friday, and I saw that they had P.S. Hershey Kisses on sale 2/$7.00. I knew I wanted to bake with them this year, so I went ahead and got two bags. The challenge at this point was to still have some left to bake with by the time I needed them!
I am working at a store close to my house today, and told one of the girls that I would bring some of my baked goods in for them next time I worked there. I knew these would be a hit! Are you guys ready to see how easy this is?
Here is what you'll need:
1 box either Spice or Carrot cake mix (Duncan Hines or Betty Crocker both work)
1 - 15oz can of pumpkin purée
1.5 tea pumpkin pie spice
12 Pumpkin Spice Hershey kisses
All I do to make these is put the cake mix, pumpkin and spice into my Kitchen Aid mixer bowl, and mix until uniform. Then, divide the batter among 12 greased cupcake liners in a cupcake pan. Set one Hershey Kiss on or pop of each cupcake, and press down into the batter.
Cover the Hershey Kiss with the batter that rose up all around it when you pressed it down, then bake according to package directions.

Oh yeah!! That's what I'm talking about! Fresh out of the oven and melted in the center. I had two, and was lucky to stop there. Thank God I'm bringing these to my coworkers tomorrow, or you might've found me at home in a food coma instead of at work.
Do you ever make something so good that you just roll your eyes into the back of your head and stand there in awe? Yeah, that was me tonight. No, they aren't the healthiest things I've ever made, but they could be a lot worse. Everything in moderation guys (and Stacey!!)

It's officially fall in my book on Tuesday when Starbucks releases Pumpkin Spice syrup. It is still a little warm, but you can't go by the weather here in AZ :-). I've heard that Starbucks is planning to release a code word on Twitter and probably FB that you can use to get PS on Tuesday. Best believe I'll be hawking my feed.
