How to Prepare for Post-Op Healthy Eating

This time, I'm going to be on crutches for a true minimum of 4 weeks. The last three surgeries I only had to use them for about 1 week maximum. I can't stand crutches. They are the biggest pain in the ass! Try carrying a purse, carrying a plate or bowl, or going up and down stairs! You are actually supposed to go up stairs backwards, did you guys know that? I got trained on the proper way to use them before surgery number 1 :-). All of your weight goes on your hands, not under your armpits as you walk. I didn't know that either, Thanks SCOI PT!

I know I'm not going to have people over to help me all the time, so I've decided to be proactive and prepare meals that can be easily cooked or reheated over the next month. I also stocked up on my favorite breakfast and snack bars:

I prepared smoothies to freeze so all I have to do is add some almond milk and turn on the Vitamix!

Small details like pulling apart pieces of low fat string cheese will help, as well:

I also stocked up on Greek yogurt with expiration dates starting next week, and ending the first week of December. Strategic planning I tell ya!

As far as meals go, I've prepared ingredients for my GF Lemon Chicken Noodle Soup to freeze:

Once the chicken is thawed, I'll put it in the bag and freeze it. All I'll have to do is add broth, GF noodles, salt and pepper! Super simple.
I made the components of my turkey chili, so all I'll have to do is thaw it out and throw it in the crockpot. Who's coming over for dinner?? You bring the FroYo and I'll provide the chili! :-D.

I also made spaghetti squash boats for my parents and I for dinner Saturday night. We had one left over, so I froze that for later, as well.

Hopefully I won't have to have anyone go shopping for me for a week or two. Those of you that offered to shop for me, I totally appreciate it and will most likely take you up on your offer at some point :-).

Thanks again for all of your support, love and well wishes y'all!!! Fingers crossed that this is the final fixer upper! Have a wonderful rest of your week, and God Bless!

Happy Trails!

Stacey
