Quick, Easy Semi-Homemade Protein Pancakes

Don’t get me wrong, I LOVE my homemade protein pancakes! I did, however, discover a product that makes the process even faster and easier. Have you guys tried Kodiak flapjack mix?? I get mine in a huge box from Sam’s Club because #savings !

Since I am so focused on getting a ton of protein in my diet, I modified this recipe to maximize protein while maintaining fluffiness and taste. This post contains an affiliate link that helps support the maintenance of my blog. Plus, I think you’ll love the protein!

Here’s what you’ll need:

  • 1.5 cups Kodiak Power Cake Flapjack and Waffle Mix

  • 1-1.25 cups unsweetened almond milk (or your milk of choice)

  • 1/4 cup egg whites

  • 1 scoop protein powder (I use Isagenix IsaPro Plant-Based protein - get it here)

  • Cinnamon (measure with your heart ◡̈ )

Blueberry topping:

  • 1 cup blueberries (fresh or frozen)

  • Juice from 1 lemon

  • 1/4 cup sugar free maple syrup

  • 1 tea cinnamon

Directions:

  1. Mix all of the pancake ingredients in a blender or bowl (whatever is easiest - I use my Vitamix)

  2. Add ingredients for the topping to a skillet on medium heat, mix well, and cook while stirring occasionally while cooking the pancakes. Mixture will thicken up. Be careful not to burn.

  3. Grease a skillet or griddle with spray coconut oil and cook pancakes (~1/4-1/3 cup of batter each) until slightly browned.

  4. Serve two pancakes topped with blueberry topping and maple syrup of your choice.
